Enter your rim depth, or pick a wheel, to get the shortest valve that works, a length with more margin, the valve lengths Reserve, Schwalbe and Peaty's sell, and whether your valve fits the rim's hole.
How long should a valve be? At least the rim depth plus 15 mm. Peaty's: "We recommend there to be around 15mm of valve stem sticking out from your rim - ultimately depending on the insertion depth required by your pump head." For a 45 mm rim that is 60 mm.
Inputs
Minimum valve length
60 mm
Suggested
65 mm
Minimum: the 45 mm rim depth plus 15 mm, as Silca and Peaty's both put it, so the pump head has stem to grip. Suggested: rim depth plus 20 mm, this site's convention, for pump heads that need more stem.
Tubeless valves that reach it
Reserve Fillmore70 mm (Reserve's table: 30 to 48 mm rims)
Schwalbe Tubeless Valve60 mm, or 80 mm
Peaty's x Chris King MK260 mm, or 80 mm
Tubeless: how much of the valve shows depends on the rim bed. Peaty's: "The exact fitment would vary on how much of a dip there is in the rim bed. Some rims also have a recessed valve hole on the inside of the rim to reduce the length of the valve required."
SAFETY: Never fit a Presta valve in an 8.5 mm hole without a reducing sleeve: the edge of the hole can cut the valve off the tube. Tighten the rim nut by hand, never with pliers. Schwalbe: "The rim nut must only be tightened by hand. Never tighten the rim nut with pliers, as this can lead to tube damage."
Valve lengths and rim depths are the makers' own. Measure your rim through the valve hole if it is not listed.

At least 60 mm: the rim depth plus 15 mm. Silca: "Take your deepest rim depth and add 15mm to it"; Peaty's recommends about the same left above the rim. This site suggests 65 mm, rim depth plus 20 mm, for pump heads that need more. In tubeless valves that is Reserve 70 mm (its table puts 30 to 48 mm rims on that length), Schwalbe 60 mm or 80 mm for the longer margin and Peaty's 60 mm or 80 mm for the longer margin.
Presta vs Schrader: which hole?
Presta needs the small hole, Schrader the large one. Schwalbe: "The Sclaverand valve is narrower than other valves (6 instead of 8 mm)". Rims are drilled 6.5 mm for Presta, and Schwalbe: "An AV valve hole has a diameter of approx. 8.5 mm". A Schrader or Dunlop valve, 8 mm across, does not go through a 6.5 mm hole.
Can I use a Presta tube in a Schrader rim?
Only with a reducing sleeve in the hole. Schwalbe: "Be aware that using Sclaverand valve tubes on rims with larger valve holes often leads to a valve tear off when the sharp metal edges around the valve hole cut the valve stem off the tube", and for its Aerothan tube in an AV hole, "In this case, a reducing sleeve should be used". Schwalbe also warns: "Be aware that there are also rims that have the correct valve hole of 6.5 mm on the outside, but a larger hole of 8.5 mm on the inside, which causes the problem".
Do I need a longer valve for tubeless?
The same rule applies: rim depth plus about 15 mm showing. What changes is where a tubeless valve sits. Peaty's: "The exact fitment would vary on how much of a dip there is in the rim bed. Some rims also have a recessed valve hole on the inside of the rim to reduce the length of the valve required." Measure through the valve hole to the rim bed rather than going by the rim's quoted depth alone.
What is a valve extender?
A threaded tube that screws onto a valve whose core has been taken out, so a short valve reaches past a deep rim. It needs a removable core. Schwalbe, on its Aerothan tube: "The valve core of the Aerothan Tube is screwed in and can be replaced if necessary. This also makes the valve stem suitable for extensions".

Where these numbers come from
How much valve to leave above the rim, and what the rim bed does to it: Silca, Peaty's.
Valve lengths, and Reserve's rim depth for each: Reserve, Schwalbe, Peaty's.
Valve holes, reducing sleeves, the rim nut and valve extensions: Schwalbe.
Rim depths of the preset wheels: Zipp.
Site convention: the suggested length, rim depth plus 20 mm. No maker read here publishes it.
